Arugula, Orange and Avocado Salad with Shaved Parmesan Cheese




Are Mondays "International Diet Day" in your house? They definitely are around here. The weekend is always the time to have our favorite pastry from our favorite bakery, cook the most scrumptious meals, open the best bottles of wine, treat ourselves to dessert, sleep more, move less. By the time it is Monday morning my pants just don't fit right. But it is Monday, and Monday always feels like January 1st to me. It's like I  am given another chance. A chance to get back into a healthier life style. 


Nothing screams healthy louder than a fresh green salad. With that in mind I served this lovely arugula salad with my succulent chicken thighs for dinner tonight. This salad is fresh, creamy, sweet and tangy - one of my favorites!! It was the perfect way to start the week. Hopefully we will keep it up until the next weekend!



Arugula, Orange and Avocado Salad with Shaved Parmesan
Serves 2


3 1/2 cups of arugula, tightly packed
Orange segments from 1 fruit
Shaved Parmesan cheese for topping
1 avocado, sliced
Vinaigrette:
3 tablespoons of extra virgin olive oil
1/2 tablespoon lemon juice, freshly squeezed
1 tablespoon orange juice
1/4 teaspoon vinegar
1 tablespoon of red onion
1 small garlic, finely chopped
2/4 teaspoon salt
freshly ground black pepper to taste


Mix all the vinaigrette ingredients until well combined and set aside. Place arugula and orange segments in a large bowl. Add the vinaigrette and toss. Add the avocado and toss it gently. Plate the salad and top it with shaved Parmesan.
